
1. Cut the air-dried chicken into pieces and wash with warm water.
2. Steam the chicken in a steamer over high heat for 40-45 minutes, remove and set aside.
3. Heat 100ml oil in a hot pan, increase the oil temperature to 180 degrees Celsius and stir-fry the chicken until the surface is slightly golden, add the garlic, chilli and simmer for 3-5 minutes. Add garlic, chilli and stir-fry well, then serve.
